Test newer kernel/fw releases with touchscreen

Description
The 1.1.0 release ran into problems with the touchscreen with kernel 4.19.122. I had to fallback to 4.19.106.
I need to test latest releases of the kernel/fw pairs to see when this gets fixed. If nothing newer than 122 is available then I should git-bisect until I find the commits that broke it.

This is likely not a problem anymore. The 7" RPi touchscreen as well as the screens used for PiSentry and PiStore are working well with the 5.10 kernel. But this should be revisited after the next bump to latest kernel, which should be a 6.x release.

Verified both TFT (pisentry and pistore) and official 7" displays work with 6.y kernel and latest firmware in v3.0 dev system build.
